In an otherwise gloomy week for news, I loved this story about the “leguminati” - a secretive network of people “establishing mycorrhizal-like networks of commerce and influence, taking root in academia and institutions, and even extending their tendrils into supranational governance”. In other words, a network of people - “led” by Californian chef and businessman Steve Sando - promoting the nutritional and environmental benefits of legumes - like peas, beans, lentils, chickpeas and peanuts. It takes 5000 litres of water to produce 1 kg of beans, compared to 15,400 litres for 1 kg of beef. And not only do legumes produce their own nitrogen, they leave it behind in the soil when they’re harvested. Very useful when nitrogen fertilisers account for up to 4.5% of global greenhouse gas emissions. Oh, and they’re high in protein and one of the richest natural sources of fibre there is.
