VOTING DAY FOUR - THE RUM RUNNER

THE RUM RUNNER is what I call a "vacation drink". Vacation drinks are fun, complex, and usually smack you with a blast of tropical flavors. They're on the sweeter side, but hey, that's okay, because the calories don't count—you're on vacation, after all.
The pitfall of any vacation drink is washing out the flavor of the spirit. While being unable to taste any alcohol sounds like a good thing, it comes with two drawbacks: 1) your guest may become skeptical about the strength of the drink, and 2) it becomes very easy for them to drink too much without realizing it. This is especially true with frozen and blended versions of the cocktail.
It also needs to be as Instagrammable as it is delicious. Vacation and fun go hand in hand, so even if you're just making it for friends at home, it needs to be served in a fancy glass, and the garnishes have to be over-the-top.
Like many other rum-based vacation cocktails, it's best to use a mix of light rum and dark rum in order to strike a balance between alcohol strength and depth of flavor.
Here's my favorite Rum Rummer recipe, along with a variation...
1. Add 1 oz. Bacardi Light Rum to a shaker
2. Add 1 oz. Sailor Jerry's Dark Rum
3. Add 1 oz. Giffard Banane du Bresil Liqueur
4. Add 0.5 oz. Chambord
5. Add 2 oz. Pineapple Juice
6. Add 1 oz. Fresh Lime Juice
7. Add 0.5 oz. Grenadine
8. Add a scoop of ice and shake vigorously
9. Tumble into a Hurricane glass and top with fresh ice cubes to fill the glass
10. Garnish with a giant pineapple wedge on the rim, along with a Maraschino Cherry and a long banana slice
VARIATION:
BAHAMA BREEZE - Sub Light Rum with Coconut Rum, sub Chambord with Apricot Liqueur, replace 0.25 oz. of Grenadine with Honey
