It was about naming a part of myself. Inari is a place in Lapland, where the wilderness stretches endlessly, and time feels suspended. It’s a landscape of contrasts: harsh yet beautiful, ancient yet alive. It embodies the grounded stillness I return to when seeking clarity—a reminder of where I come from and the roots that hold me steady. Inari is also the Shinto goddess of rice, sake, and wealth—a symbol of nourishment, abundance, and transformation. She represents not just sustenance but the flow of life itself. For me, her presence is less about daily rituals and more about an inner world: a space where simplicity meets depth, and where I find the courage to transform the ordinary into something meaningful. INARI, then, is a bridge between two worlds. What could we offer at the heart of Uttara in the midst of its hustle and bustle? A quaint little bistro serving Asian fusion cuisine in a cozy country-side setting that gives a pleasant escape. While we may love the fast paced life, we often need some time to sit back and unwind. We went with the concept of "Trouvaille (a lucky find)" as our bistro is hidden amidst a concrete jungle. There is a stark contrast between the surrounding environment and the ambience of the bistro which often surprises the first timers. Before setting up a concept it is important to understand the people and the place. The concept must not only suffice the immediate user needs (as needs change) but also tell a story that people can connect with and build a relationship that only grows with time.

Dim sum, a cherished tradition in Chinese culture, has undergone significant changes in recent years. The introduction of QR code ordering and modern approaches has brought convenience but has also reduced the personal touch and human interaction. As digital transformation continues, a key challenge is to preserve the traditional behaviours and spirit that make dim sum special. Unfortunately, traditional dim sum establishments like Lin Heung Tea House (蓮香樓) and Sun Hing Restaurant (新興食家) are becoming increasingly rare to find. The origins of dim sum can be traced back to the tea houses that emerged along the Silk Road trade route, connecting China with Central Asia and Europe. These tea houses initially served as resting places for weary travellers. As the popularity of dim sum grew, these establishments began offering bite-sized snacks alongside tea, providing nourishment and aiding digestion. Nowadays, in Hong Kong and many other cities, dim sum restaurants have adapted to modern dining habits by serving throughout the day and into the evening. For example, Hakkasan in Las Vegas offers a unique experience by serving dim sum from morning, accompanied by tea, until past midnight, with cocktails. Despite these changes, the essence of yum cha remains the same - the enjoyment of delicious food in the company of loved ones. Looking ahead to the future, it remains uncertain what lies ahead for dim sum culture. Will it continue to adapt and innovate while staying true to its roots? Only time will tell.
