Mini Cranberry, Orange, and Chocolate Pavlovas These delicate, festive pavlovas bring together a perfect trio of flavors: tangy cranberries, refreshing orange, and rich chocolate. They’re a beautiful dessert for holiday gatherings! Servings 8 mini pavlovas Ingredients For the Meringues: 75g orange-flavored chocolate, melted 4 large egg whites Pinch of salt 225g caster sugar (reserve 2 tsp for later) 1 tbsp cornflour 1 tsp white wine vinegar 1/2 tsp vanilla essence For the Topping: 150g fresh cranberries 4 tbsp caster sugar 1 tbsp orange-flavored liqueur (such as Grand Marnier) 1 large orange, zested, peeled, and segmented (reserve a little juice) 300ml double cream Icing sugar, for dusting For the Chocolate Bark: 50g dark chocolate (70% cocoa solids) Method 1️⃣ Prepare the Meringues: Preheat the oven to 190°C (325°F, Gas Mark 3). Line 2 baking sheets with parchment paper. Melt the orange-flavored chocolate in a bowl over a pan of simmering water (ensure the bowl doesn’t touch the water). Once melted, remove from heat and cool slightly. In a large mixing bowl, whisk the egg whites and a pinch of salt with an electric beater until soft peaks form. Gradually add the caster sugar (reserving 2 tsp), whisking well after each addition, until stiff and glossy. Sift the cornflour over the meringue and gently fold through. Mix the reserved sugar with vinegar and vanilla essence, then fold this mixture gently into the meringue. On the lined baking sheets, create 4 mounds of meringue per sheet. Drizzle a bit of melted chocolate over each and use a teaspoon to swirl the chocolate into the meringue, forming a 9cm circle. Add another spoonful of meringue on top, drizzle with more chocolate, and spread into a 12cm circle, making a slight dip in the center. Bake for 5 minutes, then reduce the temperature to 110°C (225°F, Gas Mark ¼) and bake for an additional 45 minutes. Allow pavlovas to cool on the parchment on a cooling rack, then chill completely in the fridge before removing from parchment. 2️⃣ Make the Cranberry Topping: In a saucepan, combine cranberries, sugar, orange liqueur, orange zest, and reserved juice. Heat gently, stirring until the sugar dissolves. Cook until the cranberries start to burst and the mixture thickens, but retains some cranberry shape. Cool for up to 1 hour before using. 3️⃣ Make the Chocolate Bark: Melt the dark chocolate as before, then spread it thinly on a metal or marble surface. Once just set, use a sharp knife to scrape the chocolate into shards resembling tree bark. Store in an airtight container until serving. 4️⃣ Assemble the Pavlovas: Whip the double cream until it holds soft peaks but remains slightly floppy. Spoon the cream into the center of each pavlova. Arrange orange segments over the cream, then top with the cooled cranberry mixture. Garnish with chocolate bark shards and a dusting of icing sugar. Serve immediately for a crisp texture, or let them sit up to 2 hours if you prefer a softer, chewier pavlova.
