For the last few years, whey has acted as a market signal in the dairy industry. And now, whey is on the move. In the last two weeks, whey has seen a 14% price increase on the Chicago Mercantile Exchange, with spot prices rising six cents from 0.42 to close on Monday at 0.48. Where will whey lead, and will the rest of the dairy follow? USDA raised 2024 forecasts for cheese, butter, dry whey, and nonfat. Stronger projected demand is paired with softening production in the U.S. The spring flush has passed, and milk production is decreasing throughout the US as summer heats up. The USDA Dairy Market News reports that in places where heat has impacted production, like California and Arizona, securing milk volumes has become more challenging as summer demand remains steady. While cream volume loads are generally available across the US to meet most needs, there are some indications that cream volumes may be tightening. Retail cheese demand will likely increase as the summer rolls on. With the number of milk cows in the United States continuing to fall and the prices for dairy cow replacements continuing to climb, dairy commodities may follow whey’s lead and begin to spike later in the year. Whey may be the little guy in dairy commodities, but he’s often the canary in the coal mine, indicating possible pricing changes ahead for dairy.
