About us

Metz Culinary Management was established in 1994 by entrepreneur John C. Metz as a custom dining management service company with a “Guest First” philosophy serving a variety of market segments, higher education, corporate dining, healthcare and independent and public schools. Today, Metz Culinary Management is led by CEO Jeffrey C. Metz. Jeff, a food service veteran himself, who continues his father’s legacy. Under Jeff’s leadership, Metz Culinary Management currently ranks #13 on Food Management Magazine’s list of the Top 50 Management Companies in the United States. In addition to foodservice, the Metz family operates numerous eateries throughout the east coast including beloved national brands: TGI Friday’s, Ruth’s Chris Steak House, and Chick-fil-A; plus, two start-up brands: Marlow’s Tavern and Lucky’s Craft Food and Drinks.   • In late November, our Nutri-Serve teams were challenged to unleash their creativity. Using only kitchen supplies, they were tasked with crafting a festive holiday display or decoration.   • In addition to offering world-class onsite services, Metz is deeply committed to contributing to the communities we serve, as our Chef2Home by Metz team recently did when they prepared over 50 shoeboxes for Meals on Wheels PLUS of Manatee, Inc.'s 2024 Shoe Box Drive.   • Metz Culinary Management is pleased to announce the culinary champion of our 2024 Roots n' Shoots Culinary Contest: Dan Drees from Niagara University. Dan successfully competed against other talented chefs from Metz, comprising all of our business segments over the past couple of months. For the first two rounds, chef contestants were given a secret ingredient to create a plant-based inspired dish. Dan's first-round winning recipe was his Roasted Brussels Sprouts over Sweet Corn Risotto. Moving onto the second round, which featured acorn squash as the main ingredient, Dan's winning recipe was Acorn Squash, Apple, and White Bean Stew, which got him to the big dance and final round. In the championship round, the chefs could choose their ingredient, and Dan prepared Vegan Seared Scallops (using king oyster mushrooms) over Butternut Squash Puree with Chimichurri, Chipotle Lime Oil, and Frizzled Leeks. The culinary contest champion took home a $250 Visa gift card, a culinary knife set, and bragging rights for the next year as the Metz Culinary Management Culinary Contest champion! His name will also be added to the annual Metz Culinary champion plaque in the Innovation Kitchen at the corporate office. The next culinary contest is already in the works and will be planned for sometime in 2025, so get ready; the next culinary champion may be you!
