The sous vide method is well known for producing flavorful, tender, perfectly cooked cuts of meat, but chefs and food service professionals also love sous vide because of enhanced food safety and extended shelf life. December is Worldwide Food Service Safety Month, created by National Restaurant Association in 1994. Cheers to 30 years of food service safety! Check out these sous vide food safety facts: 🦠 When executed properly, sous vide can be safer than traditional cooking methods because it is a fully pasteurized process that kills spoilage and pathogenic bacteria. ❄️ Sous vide products are vacuum-sealed, so they can be frozen and transported globally since they have a frozen shelf life of 18 months or more 🍽️ Meals can be taken out of the freezer and kept in refrigerators for up to seven days, which gives restaurants and kitchen staff the ability to plan for meals and prep in advance with lowered waste. We recently had the pleasure of hosting Chef Raphaela Nezinho, a Brazilian chef and former student of the Diamantes na Cozinha (Diamonds in the Kitchen) project in Brazil. Diamantes Na Cozinha creates cooking, nutrition, and hospitality workshops for young people in Rio de Janeiro living in vulnerable situations. Brazilian chef Joao Diamante is the founder and president of Diamantes na Cozinha and was recognized with the Champions of Change Award as part of The World’s 50 Best Restaurants 2024. Cuisine Solutions sponsored a three-week course on gastronomy, food safety, and more, graduating 33 students from the class out of 512 applicants. For Cuisine Solutions’ CEO and president Felipe Hasselmann, the work supporting these hard-working Brazilians is personal, as he was born in Rio de Janeiro. “I am very proud to be able to help in all the ways we are partnering with Diamante na Cozinha on these projects and am even happier to see and receive Rapha here and let my teams work a bit with her,” said Hasselmann. “I really hope in the future we bring more students from the community here for three months so they can learn the sous vide technology, as we are today the largest sous vide company in the world, and distribute through factories in Asia, Europe, the Middle East and here in the U.S.” “The partnership with Cuisine Solutions has given Diamantes na Cozinha a greater reach and international visibility, bringing more credibility to the national market and enabling us to impact more people,” Diamante said. The L'Académie Internationale de la Gastronomie (AIG) has awarded the Grand Prix International 2024 de la Science de l'Alimentation (International Grand Prix for Food Science) to Dr. Bruno Goussault for his lifetime of work on sous vide cooking at precise temperature. Congratulations Bruno! A big thank you to Jacques de Maillard, Honorary President of the AIG and Fabien Petitcolas, President of the AIG. The award will be formally presented during the 2025 International Sous Vide Day (ISVD) party in Lyon on January 26. Today marks two month out from ISVD, which is also Dr. Goussault’s birthday! In our November employee spotlight, we’re featuring Senior Graphic Designer, also an artist and new mom, Olivia Kim. We asked Olivia to share a little more about her background and interests. 💕 Her career path was inspired by her mom, a very creative person who embraces changes. She encouraged Olivia to stay open-minded and express herself freely. 🧳 Born and raised in Korea, she moved to Pittsburgh to pursue a degree in Fine Arts from Carnegie Mellon University. 🥾 Loves dogs and hiking 🤝 Olivia’s advice to someone starting their career, “Understand how other departments work as it will help you excel in your own. Take the time to learn and appreciate everyone’s work style—it really makes a difference!” 👩🏻🍼 As a new mom, Olivia is inspired by her supervisor Rachel Cothran. “She’s not only an incredible leader but also a resilient mom who can handle anything.
