  • According to Datassential's 2025 Trends Report, the consumer's definition of food value is evolving, with 𝗾𝘂𝗮𝗹𝗶𝘁𝘆 (𝟱𝟲%) 𝗮𝗻𝗱 𝘁𝗮𝘀𝘁𝗲 (𝟱𝟮%) 𝗻𝗼𝘄 𝗿𝗮𝗻𝗸𝗶𝗻𝗴 𝗵𝗶𝗴𝗵𝗲𝗿 𝘁𝗵𝗮𝗻 𝗰𝗼𝘀𝘁 (𝟰𝟳%) 𝗶𝗻 𝗶𝗺𝗽𝗼𝗿𝘁𝗮𝗻𝗰𝗲. This shift reflects a growing desire for high-quality, flavorful food (and ingredients), particularly in the face of rising prices. “Value is still not just about price, and consumers are continuing to really prioritize and value quality and taste over pure pricing,” said Renee Lee Wege, trendologist and senior publications manager at Datassential. The report also highlights the challenge of food labeling, with many consumers finding certifications and nutrition labels confusing, suggesting a need for clearer packaging. “To gain consumer confidence and offer greater transparency when it comes to CPG products, retailers can take inspiration from other countries that already showcase front-of-package, at-a-glance nutrition information and warnings,” said Jaclyn Marks, trendologist and senior publications manager at Datassential. While there is still potential for increased consumer awareness of food labels in the US, it’s crucial for food and beverage retailers to prioritize transparency. Using ingredients that support CPG certifications like 𝗖𝗲𝗿𝘁𝗶𝗳𝗶𝗲𝗱 𝗢𝗿𝗴𝗮𝗻𝗶𝗰 and 𝗡𝗼𝗻-𝗚𝗠𝗢 𝗣𝗿𝗼𝗷𝗲𝗰𝘁 𝗩𝗲𝗿𝗶𝗳𝗶𝗲𝗱 on food product labels will be key to success, as these certifications are trusted by many consumers, signaling that the products meet established standards for quality and sourcing.     For those looking to indulge in #comfortfoodseason while maintaining a healthy plant-based diet, here’s an excellent recipe for homemade vegan pancakes with a secret ingredient twist: 𝗔𝘂𝘀𝘁𝗿𝗮𝗱𝗲’𝘀 𝗡𝗼𝗻-𝗚𝗠𝗢 𝗖𝗼𝗿𝗻 𝗦𝘁𝗮𝗿𝗰𝗵 Corn starch works to reduce gluten development and adds a light, airy texture to make your pancakes extra fluffy & tender, while plant-based milk adds a subtle nutty flavor that perfectly ties the ingredients together. ——————————————— 𝗙𝗹𝘂𝗳𝗳𝘆 𝗣𝗹𝗮𝗻𝘁-𝗕𝗮𝘀𝗲𝗱 𝗣𝗮𝗻𝗰𝗮𝗸𝗲𝘀 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 • 1 cup all-purpose flour • 2 tbsp corn starch • 2 tbsp sugar • 2 tsp baking powder • ½ tsp baking soda • ¼ tsp salt • 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water) • 1 cup plant-based milk (almond, cashew, or oat milk) • 2 tbsp organic high oleic sunflower oil (plus more for cooking) • 1 tsp vanilla extract • 1 tsp apple cider vinegar or lemon juice 𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀 1. Prepare Plant-Based Milk Mixture—In a small bowl or measuring cup, combine your plant-based milk and apple cider vinegar (or lemon juice) to make a quick buttermilk. Let it sit for 5 minutes to curdle slightly. 2. Mix Dry Ingredients • All-Purpose Flour • Corn Starch • Sugar • Baking Powder • Baking Soda • Salt 3. Make the Flax Egg • Combine 1 tbsp flaxseed meal + 3 tbsp water. • Stir to mix well. • Let the mixture sit for 5-10 minutes to thicken until a gel-like consistency forms. 4. Combine Wet Ingredients (separate bowl) • Flax Egg • Plant-Based Milk • Sunflower Oil • Vanilla Extract 5. Combine the Batter • Pour the wet ingredients into the dry ingredients. • Stir gently until just combined—do not overmix. 6. Rest the Batter • Let the batter rest for 5-10 minutes. This allows the baking soda and corn starch to fully activate, making the pancakes extra fluffy. 7. Cook the Pancakes • Heat a non-stick skillet or griddle over medium heat and lightly grease it with oil or vegan butter. • Pour about ¼ cup of batter for each pancake onto the skillet. • Cook until bubbles appear on the surface and the edges look slightly dry (about 2-3 minutes). • Flip and cook for another 1-2 minutes until golden brown. 8. Stack & Serve your fluffy plant-based pancakes with maple syrup, fresh fruit, nut butter, or a sprinkle of chopped nuts for extra flavor.
