Alpinage Cheese

Our cheese is now available in the Pacific Northwest region!  Find us at all Market of Choice locations in Oregon as well as Town & Country Markets stores in Washington state. Excited to now have a footprint in this beautiful region where we just spent a full week supporting the launch of our Raclette in both Portland and Eugene at the 2024 Market of Choice Product Experience show (while visiting family on the coast in Tillamook🥰)

After surviving through the last couple of weeks mostly made of cleaning, hand-grinding, coating and sealing the concrete floor, our new warehouse is coming along nicely and is almost ready to welcome our new aging cellars and processing equipment. Stay tuned for the end result coming soon! 💪

From sitting in an office for years with plenty of dreams in mind to watching ourselves on Top Chef today on my way to France, on the same exact flight i used to take consistently for work, it does feel kind of surreal. Even though we may or may not be in business anymore next year or even in twenty years from now, I can only recommend to anyone the (most of the time 🙃) fun and rewarding journey of entrepreneurship. What a trip it's been!

Our Fenugreek Raclette won 1st place in the Smear Ripened category last week at the 2024 Wisconsin State Fair competition held by the Wisconsin State Fair Dairy Promotion Board! This limited edition is only available at some select stores across the state, our cheese shop (open on Fridays) or at the Oak Creek, Greenfield, Shorewood and/or Brookfield markets on Saturdays and Sundays for the next couple of weeks. Special thanks to Saz's Hospitality Group for bidding on our winning wheel and contribute to the overall $65,080 raised that evening, funds that are used to support dairy youth, student scholarships and promote our stellar Wisconsin dairy industry 🐮🧀

Last day of training in beautiful western France in Pays de la Loire on our new ultrasonic cutting machine. This state of the art equipment will drastically change the dynamic for our company, support our growth and open more opportunities in retail with our new packaging and exact weight products coming soon. Can't wait to receive it back to Wisconsin and put it to work! 🧀🤓

2024 Summer Fancy Food Show - Day 2! Come try our Mount Raclette cheese at our New-York based distributor 'Food Matters Again' @ Booth# 155 at the Jarvits Center in Manhattan 🧀 We will be sampling there all day 💁🏻♂️

We have been radio silent for the past couple of weeks but we do have a strong alibi that has kept us fairly busy: we bought a new warehouse! Strategically located right off I-94 in between Milwaukee and Chicago, this 2000+ square feet of empty space will help us support our growth, stay competitive and meet increasing demand for wholesome, innovative and high quality dairy products. While we are planning on drastically expanding our 'affinage' operations from there (and eventually develop new products), we will also heavily focus on improving our conversion capabilities with the installation of a new, semi-automatic cutting and packaging line that will meet the always evolving food industry demand for exact weight and shelf stable products. This important milestone is a critical investment for our business and we will happily bring you along on this adventure for the next couple of months with regular updates, videos and pictures of our progress toward our goal: becoming an industry leader in the washed rind cheese category. 🧀🧀 We also want to thank all our supporters, faithful customers, suppliers and industry professionals for their support for the past three years now as we can confirm that it does take a village to start, from scratch, and run a sustainable business in today's marketplace.
