Generally speaking, aldehydes in beer are not good. If present even at low levels, some of these compounds can have a negative impact on taste and smell, contributing to stale, cardboard, or grassy flavors and odors. A recent Agilent application note looks at the determination of hexanal, furfural, phenylacetaldehyde, and trans-2-nonenal in beer. These are among the most recognized aldehydes responsible for off-flavors so monitoring, measuring, and controlling them is essential to producing a consistently good product. An 8890/5977C GC/MSD equipped with a PAL3 RTC autosampler was used for the application. The ALS had a solid-phase-microextraction (SPME) tool that was used to perform sample prep prior to the analysis. The method demonstrated excellent sensitivity and repeatability for the aldehydes of interest across three replicate injections of four different brands of beer.
