Starting out in 2008, founded by Giuseppe Mascoli in Brixton Market London, we're taking our authentic Neapolitan sourdough pizza across the UK. Franco Manca is built on the belief that to be truly enjoyed, food needs to be made with authentic, delicious ingredients, organic and locally sourced where possible. Guests can enjoy classic Italian flavours from our Margherita to fresh seasonal specials. Franco Manca is the pioneer of the classic Neapolitan sourdough pizza in the UK, we work with seasonal ingredients that are cooked in the traditional method. We aim to keep our business and food simple, authentic and really good value.

PIZZA & PEOPLE STORY Today 10th December we celebrate a legend of the FM family. 15 years ago he stepped foot into a Franco Manca pizzeria for the first time and since then he has been the mastermind behind our food, menus and suppliers. Always on a mission to find us the best quality, planet-friendly ingredients and helping small independent suppliers grow along the process. It is the one and only Alfonso! When did you start working for FM? I first started working in FM on 10th December 2009 and it was love at first sight. Working with all natural ingredients such as natural yeast, organic lemons and tomatoes, handmade sourdough, made me feel like I was in the right place. I felt at home. Why do you love working in hospitality? Hospitality brings together food and people. What is there not to like? Which FM pizzerias have you worked at? I lost the count! Now my role is to ensure we have the best quality products for our teams to cook with and for our customers to enjoy. So I feel as I am part of all our 70+ pizzerias. Who/what inspires you? Food is a big part of my life and I am inspired by the continuous evolution of new ingredients and innovative farming techniques. Everyday I learn something new and everyday I get to taste something new! What’s the best part about working for FM? The best part is working with all the other departments: with the Food team in creating new dishes, and then with the Marketing team in developing a new menu, ending with the People team in creating training material. What’s your favourite pizza and why? I am from Naples and for me the queen will always be a classic Margherita. However I don't mind throwing in a few slices of our spanish chorizo, or a few grilled artichokes from Gragnano, some 'Nduja from Spilinga or a couple of our cantabrian anchovies.
