Earlier these mouth watering desserts are said to be originated in West Bengal by Nobin Chandra Das who is credited for creating this chenna sweet made from cottage cheese that we all know today. Ghevar: A Sweet Tradition!! A batter of flour, ghee, and cold water is used to make this traditional Rajasthani sweet treat. The batter is then carefully placed into boiling hot oil or ghee to fry, creating a circular, disc-shaped dish with a beautiful pattern. Once the dish is perfectly deep-fried, it is either drenched in sugar syrup or covered in it. It is then usually topped with chopped nuts like pistachios or almonds, silver flakes, and thickened milk (rabri). Cultural Significance: Ghevar is not just a dessert but also a token of love and goodwill. During Teej, women often receive ghevar as part of their 'Sindhara', a gift sent by their parents after marriage. On Raksha Bandhan, it is commonly exchanged between siblings as a symbol of the sweet bond they share. Ghevar is unique for its preparation method: A thin batter made of refined flour, water, and ghee is poured into hot ghee in a specific manner, creating a porous disc. Once fried, the ghevar is soaked in sugar syrup and garnished with silver leaf, nuts, and saffron. The artistry required to achieve its delicate, airy texture speaks to the skill of Indian halwais (sweet makers), who have perfected this technique over generations.
