The estate is in total 3.5 hectare and it is the mildly descending 2 hectare field facing south, that we have planted with Solaris (3/4) and Pinot Noir (Frühburgunder, 1/4). The soil at Østergaard is typical moraine soil or clayey highland soil created by the last ice-age. This type of soil contain plenty of stones from the Norwegian mountains and have a good retention of minerals in the clay layer at approximately 1.5 m depth. The field have been used for horses in the last 20 years and we intend to keep the amount of spraying to the the absolute minimum required, which clearly is reflected by the level of dandelions in the spring. We have not yet applied for organic production, but we intend to earn this. It is our ambition to make “farm-wines” that are adapted to the soils and near-coast microclimate of Østergaard. Our first priority will be to create a dry white that can fit well for hedonistic living at the terrasses in Northern Zeeland and Gilleleje in particular. It should also come in a version which fit to the shell-fish and seafood of the restaurants in Gilleleje Havn. Yeast consumes the sugars in the mash and produces carbon dioxide and alcohol as by-products. This process typically generates heat, so it's essential to monitor and control the temperature to ensure optimal fermentation conditions. Fermentation takes around 3-5 days depending on the type of liquor being produced. It is the slowest process in the spirit production process. Nordic Wine Markets: Key Trends and Insights 🍇 The Nordic markets of Denmark, Finland, Norway, and Sweden represent a significant 30 million litres of Australian wine exports, accounting for 5 per cent of the total volume exported in the 12 months to June 2024. These markets, while smaller in size compared to other European countries, are pivotal for Australian wine producers as they navigate changing consumer trends and economic pressures. 🍷 Stability amidst a broader decline is a defining characteristic of the Nordic wine markets. While wine consumption in larger European markets like the UK and France continues to decrease, the Nordic region is expected to stabilise, with modest growth projected in Sweden and Norway over the next five years. This stability contrasts with the flat forecasts for Denmark and Finland, which are grappling with similar consumer trends but without the same positive outlook. 🌍 Sweden's population growth is driving an increase in overall wine consumption, even as per capita consumption slightly decreases due to cost-of-living concerns. This trend is accompanied by a growing preference for sustainable packaging, with Australian cask wine sales seeing a notable 10 per cent increase. Norway, meanwhile, is experiencing a shift towards premium wine segments, bolstered by the country's affluence and a strong appreciation for quality wine. 📉 In Denmark, where the wine market is not monopolised, consumption has been gradually declining. This trend is expected to continue, albeit at a slower pace. Great points from Miles Beale and the Wine and Spirit Trade Association on the future of the wine sector, in particular on the potential issues around the proposed revisions of the UK Alcohol Excise Duty: https://lnkd.in/eSG6fxvz To set the scene a little, wine arriving in the UK currently has a +/- 0.5% tolerance for ABV declaration. Anything measuring outside of this is often simply laser coded at a different ABV declaration when bottled. A simple and effective solution that is widely adopted. Under the new plans to have a different duty band for every 0.5% increment in ABV this solution no longer works. The wine would now move to a different duty band meaning the brand owner will have to issue a new barcode and agree new pricing with the retailer. This will all mean more wine being held in tanks while new barcodes and labels are printed, shortages on shelves, and brand owners holding more wine than before to accommodate unforeseen tax band changes. As an industry looking to simplify accessibility for wine producers across both the new and old worlds, these regulations complicate existing practices, put more strain on the supply chain, and raise the cost of accessing the same market. Looking at these proposed changes to duty, I'm concerned that the industry perspective hasn't been heard, and there's a clear need for an alternative solution. #VividVision #SupplyChain #Wine

I am not surprised to see a new industry be created thanks to decline of wine sales, it seems that everyone has a new angle, solution or answer the world of wines malaise of late. New ways in which we should be reconnecting and engaging with wine lovers, the latest one I have come across is the concept of Rethink. An interesting hashtag that is for sure but do these new generation fortune tellers really have the answer or is this is just another way to create a very healthy revenue stream? A new wave of consultants flooding the industry preaching their version of the gospel of change and future for the industry. If they really have the golden ticket then why do the big guys like LMVH still continue to go backwards are you going to tell me they are not doing the right thing, these kids are the true brand masters "LVMH Moët Hennessy Louis Vuitton, the world’s leading luxury goods conglomerate, recorded revenues of €41.7 bn in the first half of 2024. This nearly matched the revenue of the same period last year. However, the Wines & Spirits division saw a 9% drop in sales, with profits falling by 26%." As Hamlet said " something is rotten in the state of Denmark" Pre and during COVID the success of engagement and DTC was touted as being driven by by new POS systems that immediately create email, EDM, blog posts, text, sms reminders et al, wine lovers were drowning in hundreds of updates daily, so excess information is not the answer that is for sure just check how many unsolicited offers and updates you get on a daily basis. Next is was the Wine Club, how does the industry lock into buyers for at least 12 months, now its wine dinners and tastings there seems to be one every week, then there are wine tours mainly only for those who can afford to shelve 10K or more but do these increase engagement and more importantly future sales. At best the results are short term and patchy as there is just another offer around the corner waiting to be sold to wine lovers, lets be authentic here the average wine drinker buys their wine according to what the label looks like (around 70%) , by brand name or referencability. The answer to this issue likes in the fact we , wine lovers are not only looking for a good fair priced wine, they want authenticity, they want the story, they want to understand the sustainability factors of the of the wine, product innovation, they want a unique experience its no longer a one size fits all approach. You might want to take a leaf out of what is happening in Germany as thier younger wine lovers are really starting to show higher level of interest & engagment in wine and its all very positive , I will drop a further post on this soon as the answers are very evident. There is no Golden Ticket, there is no great Wine Oracle out there who can with the swipe of a wand makes things better there are so many more issues going on and around the industry which impact where we are today

This week’s Europe 🇪🇺 , it's all about " Nordic wines". In Burgundy, this year’s vintage has been particularly challenging, but on the other hand, winemaking is quietly continuing to boom in the northern countries. In Denmark, where the average temperature has risen by 2°C over the past 50 years, milder winters and a longer growing season have led to an increase in wineries over the past 20 years, with approximately 150 producers currently active. In Denmark, the Solaris grape variety, which is suited for cooler climates, occupies more than half of the cultivated area. Many of the producers are small-scale farmers, selling their wines locally, though some have production levels reaching 20,000 bottles. Denmark is known for having a large number of Burgundy wine enthusiasts, but Danish wines are sold at prices almost equivalent to French wines. As a result, some local consumers find them somewhat expensive. The UK government's totally unnecessary decision to raise excise duty on wine and continue with the mad, impracticable, Sunak reform of taxing wine by 0.5% ABV increments will have long term consequences Wine consumption may or may not fall, but UK-tailored lower-strength wines will surely become disproportionally important The narrowing of wine distribution will accelerate and, with the additional bureaucratic consequences of Brexit, producers globally will push the UK a little further down their list of priorities All such a long way from the heady, Oddbins-driven, vinous summer-of-love excitement of the UK in the 1990s
