Ask the expert Mobile-kitchen food is all the rage now, says Adam Caan of Chipsy n What inspired Chipsy? I was a fussy eater as a child. Chips were my staple food, always hand cut and odd shaped. I travelled Europe in my 20s and came across many shops selling double-fried chips with sauces: great product! I felt the UK was missing out. I met my business partner, Ramia, in 2015. With his support I put together an excellent team. Who doesn’t eat chips? Almost everything goes with chips! The people of the UK are accustomed to the flavour of frozen chips. Festivals are fun, but we’re concentrating on prepaid bookings: weddings, birthdays, corporate events. We are trialling locations in business districts in and around London. n What’s is your best seller? The chips alone – everyone loves a good chip! But pulled-beef poutine is our festival winner, made of threads of braised beef rib on a bed of fresh-cut triple-fried chips, covered with cheese curds, handmade poutine (gravy), garnished with fried onions, Parmesan and chives. n Where is the strangest place you have set up Chipsy? A Southend glamping site, deep in a forest – the trickiest place to drive a three-tonne chip truck. Contact Chipsy @chipsy_uk
