Hot off the press: EU Fermented Foods Consumer Report 🖨 Across 7,800 EU consumers in eight EU Countries and Switzerland. 🌍 What are some surprises and key takeaways? 1. Consumers trust precision #fermentation more than biomass or traditional 🎯 This is a confusing outcome, as precision fermentation is the most closely related topic to GMOs, which are controversial to consumers and often misunderstood. Perhaps the word 'precision' elicits trust. 2. Taste is still No. 1, followed by health & animal welfare 😝 Usually it's Taste, price, convenience (the latter two are not in focus). 3. Consumers prefer fermented meats at price parity, not cheaper vs. animal 💲 Prevailing thought is usually that lower = better; however, it seems that lower prices communicate a perceived lesser value to consumers 4. Yeasty was the least desirable product attribute 🍞 Despite yeast being a big part of our diets in other areas, consumers do not want its aftertaste overpowering products. Next to that, "bitter, sour and beany" were strongly undesirable off-notes. 5. Big step towards a just transition and rebalanced food system I am really encouraged by the recent European Commission report which calls for "urgent, ambitious and feasible" change in farm and food systems. It calls for a rebalancing of diets towards plant-based proteins. Highlighting the need for support such as better education, stricter marketing, voluntary buy-out of some farms and tax reduction on healthy & sustainable food products. There is also a call to move from the current subsidy system to a just transition fund. This arena has often felt like a battleground between farmers, lobbyists, environmentalists, food businesses, politicians and others. So for me the most encouraging reaction to the report comes from the European Council of Young Farmers, who saw the process of creating this report as: "actually making steps into the transition in a collective and strategic way". University of Paris Study – April 2024 - 𝗚𝘂𝘁 𝗺𝗶𝗰𝗿𝗼𝗯𝗶𝗼𝗺𝗲 𝗰𝗼-𝗮𝗯𝘂𝗻𝗱𝗮𝗻𝗰𝗲 𝗻𝗲𝘁𝘄𝗼𝗿𝗸𝘀 𝘃𝗮𝗿𝗶𝗲𝘀 𝘄𝗶𝘁𝗵 𝗮𝗴𝗲, 𝘀𝗲𝘅, 𝘀𝗺𝗼𝗸𝗶𝗻𝗴 𝘀𝘁𝗮𝘁𝘂𝘀, 𝗮𝗻𝗱 𝗯𝗼𝗱𝘆 𝗺𝗮𝘀𝘀 𝗶𝗻𝗱𝗲𝘅 The academic research world has been pondering the body’s microbiome, particularly the gut microbiome for its characteristics. Studies have shown that the body seems to respond to disease in a network fashion. This includes a 2020 study in the Netherlands that highlighted the possibility. The scientific method requires acceptable measurements and now early research on Tara Co-abundance seems promising. That work summarizes that “𝘵𝘩𝘦𝘺 𝘦𝘹𝘱𝘭𝘰𝘪𝘵 𝘵𝘩𝘦 𝘴𝘢𝘮𝘦 𝘤𝘭𝘢𝘴𝘴 𝘰𝘧 𝘳𝘦𝘴𝘰𝘶𝘳𝘤𝘦𝘴 𝘰𝘳 𝘸𝘰𝘳𝘬 𝘵𝘰𝘨𝘦𝘵𝘩𝘦𝘳 𝘢𝘴 𝘢 𝘤𝘰𝘩𝘦𝘳𝘦𝘯𝘵 𝘧𝘶𝘯𝘤𝘵𝘪𝘰𝘯𝘢𝘭 𝘨𝘳𝘰𝘶𝘱.” That is impressive. We are sure this research topic will continue to generate more research. But what does it mean that our gut microbiome operates as a network? It has long been seen as an ecosystem. Many studies indicate relationships between various components; of course, this only makes sense. But what about the microbiome as a connected network? What possibilities evolve for you? A couple of opportunities become immediately apparent. 1. Network math suggests networks can be spiked, jolted you might say, in a specified direction. If we understand the network relationships, we could understand how to spike. 2. Networks have energy, direction, momentum, and sequences. Understanding how different foods impact the network, could lead to new understandings of using diet to affect health. This is what Clever’s work is contributing. Of particular interest is the production of phenolics via fermentation outside the body. Then the challenge becomes adding these phenolics to the body, where they are most needed. The current digestion-compromised human body is doing a poor job. Can we help it? Give the body a boost! Phenolics are the metabolites created from food and animal compounds we think of as antioxidants, anti-inflammatories, or antimicrobials. In a typical meal, the body creates broad arrays of metabolites including phenolics, and this load is added to our microbiome. Every meal alters your microbiome. And yet your microbiome, inherited from your mother and crafted for as many years as you have lived, is a stable active force. Our microbiome can be modulated, adjusted, and tweaked. 🌱 Great insights in this article on the collaboration between alternative proteins and regenerative agriculture! While the article highlights the need for solutions, I believe the article overlooks solutions that are available at scale today - plant proteins! Plant-based proteins brings farmers, food makers, and eaters together and have been for decades. Farmers are at the heart of this transformation, growing sustainable and nutritious food for people. But the rest of us have a job to do too. To scale these diversified crops we need to continue innovating and bringing products to market that people want to eat (and eat more than once!). Formo, a German food fermentation startup, has secured US$61 million in Series B funding to expand its operations. The company is pioneering the use of Koji Protein to create sustainable dairy alternatives. The round includes existing investors, such as FoodLabs, EQT Ventures, Lowercarbon Capital, Happiness Capital | Certified B Corp, Elevat3 Capital and Grazia Capital, and welcomes new investors, such as SAZABY LEAGUE,Ltd. (株)サザビーリーグ, SevenVentures, Woodline Partners LP , The Nature Conservancy as well as the REWE Group, Europe's second largest retailer Their first products, Frischhain and Camembritz, are now available in over 2,000 stores across Germany and Austria. These cheese alternatives are produced using a fermentation process that generates significantly less emissions, land use, and water compared to traditional dairy products. 🇩🇪 Formo raised a $61M Series B and launched fermentation-based, animal-free cheeses in over 2,000 stores in Germany and Austria They've launched Frischhain, a cream cheese made from koji protein, available in plain and herb varieties, with a tomato version and a Camembert-inspired cheese on the way. Formo's cheeses are made using the microbe Aspergillus oryzae, a koji mould, which has been used in traditional Japanese foods like miso and sake. Its protein structure resembles whey, which makes it a great base for dairy alternatives. With a total of $117M raised, Formo is gearing up to scale production, go international, and develop more cheese alternatives. Formo is also pushing to launch cheeses made with precision fermentation-derived casein in early 2025. Are financial markets missing the value of healthy food is the question on the table? Super interesting report just released from Access to Nutrition Initiative and partners looking at nutrition with respect to financial outcomes in large global food & beverage companies. The conclusion states: Nutrition represents both an investment opportunity and an investment risk, and our analysis - which is based on a sample representing 10% of the market by revenues - suggests that the issue of nutrition would be given a higher priority if there was greater corporate disclosure regarding nutrition. In the 7% of cases where the issue of nutrition was mentioned by both analysts and the company it was because an analyst asked a question and the company responded. In all the other instances where nutrition was mentioned (33% of the calls) it was the company initiating the discussion with no analyst follow-up or questions. The analysis in this report highlights that there is a positive association between healthier food product portfolios and higher margins for companies with broader food portfolios. Companies with narrower food portfolios exhibit the opposite effect with the result that they are more at risk from regulatory changes that could threaten their business models.
