Product Development and Food Analysis:
Coursework involved designing a food product prototype, researching the AOAC methods for the food type and then testing the product in the lab to quantify the nutrients required for a complete Nutritional Facts Table.
Quality Assurance and HACCP/GMPs:
Term projects included development of food plant quality expectations manual and the development of GMPs and a HACCP plan for a food processing facility.
