How does yeast flocculation evolve and change over time in the brewery? I recently got a sample of Escarpment Laboratories Foggy London Ale yeast that was used for more than 200 generations over the course of several years by a local Ontario brewery (Badlands). I don't ordinarily recommend brewers repitch for so many generations for a multitude of reasons, including the fact that I'd be out of business if they all went 200 gens 😉 Troy the brewer gave the yeast to me for safe keeping, because he said it has changed to be faster fermenting and more flocculent, which helps him harvest and repitch the yeast for his heavily dry hopped beers. He says the yeast hasn't lost its haze forming ability, given that Badlands' hazy IPAs are as hazy as ever. You do NOT need a low flocculating yeast to make a successful hazy IPA, by the way. I love encountering these practical examples of adaptive yeast evolution. We do it in the lab to make new strains (see: TERPS and Pomona) and brewers are doing it if they repitch for many generations. In the case of the "Badlands Foggy", it does indeed appear to be more flocculent and faster fermenting when compared to the original strain, in a mini ferment. #1 - sounds very cool. I immediately think of the elderly or disabled that need help with cooking due to their limitations. #2 - insightful - where's AI headed... #3 - cool 😎 - does it do trains too? Wonder if there's an Android version... #4 - agreed both on the skill/art of writing and chasing excellence. We need to know how to write. People are now relying on AI to do their writing - that's concerning because we need to know how to articulate to clearly communicate. #5 - another help to approximate is to journal. Writing out thoughts is very helpful and works. I seem to only journal when in a stressful situation.

My goodness! Poor McDonalds is “struggling” with inflation and to having employeee issues ( which is Corp speak for no one wants to work there for the paltry wages and benefits they pay). Then they are seeing consumers traffic down amidst inflation? Here’s a novel idea maybe take some of the $3.5 BILLION profit that you made LAST QUARTER ( almost a 4% increase ) and lower your prices back to where they were before you raised your prices to increase your profits for shareholders?

I reported a complaint to CFIA about finding dead weevils and black particles in Jaggery, a product of Verka Foods International in Surrey BC, which is made in India. I approached the supplier first, but it seemed that the staff was least interested in noting the complaint. Such a poor response was enough to move forward. Here are some recent highlights and discovered incidents: 1. The recent ban of MDH and Everest due to ETO treatment has raised concerns about the quality of food products being imported from India. 2. Since my first year in Canada, I have observed that poor quality products are being imported from India and sold without any hesitation. 3. Similarly, Desi restaurant chains in Canada do not seem to care much about the quality of their food. They sell old and stale food, shamelessly calling it "fresh". Some of them even replace milk products partially or fully with hydrogenated fats to cut production costs. 4. The "desi" products imported from India are of poor quality, even worse than what is available in Indian local markets. Also, there is a lack of declaration of colorants added. 5. Lastly, CFIA has taken note of my complaint and accepted it. They requested more details, which have been supplied, and the samples were picked from my home address by the CFIA inspector. What are your thoughts on cases like these happening across Canada?

Grimmway Farms - the supplier of the recalled carrots, announced the recall. Affected carrots were sold various retailers such as Walmart, Kroger, Albertsons, Publix, Food Lion, Target, Whole Foods, Trader Joe's, and Canadian chains Loblaws and Compliments The carrots may have been contaminated with Escherichia coli (E. coli) bacteria which produce Shiga toxin. E. coli infections can be spread through contact with infected people, animals, or contaminated surfaces, foods, or liquids. It can cause serious and sometimes fatal infections in young children, elderly people and those with a weakened immune system. Symptoms include severe stomach cramps, diarrhea, fever, nausea and vomiting. Symptoms usually start three to four days after swallowing the bacteria. The Industrial Zen My grandfather used to wake up when the rooster sings and the sun starts to warm, life was less chaotic back then, options for mostly everything were limited, our news were brought in newspapers, some radio and television in the 3-4 available networks that existed then, and face to face in cafes and bookstores. The world has evolved so quickly in the last 50 years that now we struggle everyday to deal with all the new inputs that storm us, starting early with the traffic sounds of people leaving early to the office, then the cruel sound of the alarm in your cell phone, which assaults you once, but you snooze it, and try to sleep a little bit more, because you still feel exhausted from yesterday, and then a second and a third, until you realize that you are already late for work. Rushing to the office and cursing after you hit your foot pinky finger you just hit trying to open a kitchen cabinet, to get some cereal before running to work. Half-awake, half-asleep people wander around until first coffee shot hits in and kicks in, then it’s when we realize we are already behind in many pending items and that’s when our anxiety starts to kick in as well. The stack of mail in the table reminds you of overdue bills, your phone is starting to pop up messages of things to do in the office, and you start to feel anxious because of the upcoming meeting you have with your boss and for which you are not prepared. Everything has gotten quicker, and although we are more communicated than ever in history, we also feel emptier and lonelier than our parents and the previous generation. This has increased a higher number of people that feel sad, anxious, worried, lonely or angry, and they can’t fin the reason or can’t find ways to feel better. A lot of these people looks for options to deal with these sensations and get into bad habits such as excess of TV, social media, food, drink, smoking, all of them creating also health problems. And then most people who feel unsatisfied, look for options to improve their conditions, but as mentioned in a chaotic world where everything is faster, they also struggle to get time to do most of what they want to achieve, so you get answers like: I don’t have time to exercise I don’t have time to spend with my family I don’t get opportunities to grow in my career Etc... So, we look into things we want, but can’t get and we feel frustrated, and this creates a vicious cycle which lead to more un satisfaction, and our other problems grow higher. Work life balance must become part of our day-to-day priorities, since we can't be completely successful if we are incomplete in other areas. I don't think that robots will ever replace bartenders--at least not in the near future. But you can make your business more profitable by automating tasks for them. And one of the most time-consuming and tedious tasks bartenders have to do is rinse their mixing tins. This is the one thing that slowed me down more than anything working as a bartender. Every shift I would think to myself, "I could work so much faster if I had something to automatically rinse my mixing tins." When I first started designing Auto-Rinse™ there were a few must-haves--because I wanted to build the best, most optimal solution. This is interesting US BEER IRI grocery sell thru data from last 26wks Sept 2024 comparing alcoholic beer sell thru vs non-alcoholic beer sell thru where non-alc beer has ~73% slower velocity vs alc beer. Strange that non-alc beer the top 10-50% of beers is only 0.3 units slower vs the top 10% segment(this differs a lot from alc beer which has a 6.8 unit difference). I'm curious if this can mean that there isn't really one dominant non-alc beer SKU on shelf, but the consumer is being promiscuous in buying a few different non alcs brands and/or variety of SKUs when they fill their cart. Anyone else have any ideas on this? NOTE units could be anything from a 24ct case, 12pk, 6pk, 4pk, or even a single unit so need to make some assumptions where for non-alc beer the typical retail format is a 6pk or 12pk so the top 10% sales velocity is 3.3 units/week could equate to 20-40 cans/bottles per week. Either way some interesting data to benchmark your sales off prem.

Yassified Walmart : Bettergoods People saying this is Target coded but I actually think it’s MUCH BETTER and obvious play on Trader Joe’s “dupe” culture Can immediately call out GOODLES and Alec's Ice Cream dupes, as well as the “better for you” focus with gluten free coconut “dough bites” and playing on “premium taste” with their “campfire roasted” sauces etc If you’ve been following Snaxshot you already know GenZ/Millennials are obsessed with pretty pantries and Walmart’s catching on to it I will say this is even better than the Kroger attempts to dupe “Olipop” because the branding is still stuck in “generic” our generation wants budget to feel as a hack and still be cute enough to signal with it Private label has been outperforming brand and there’s a reason retailers all over are doubling down, not to mention $WMT learning from the emerging brands they are bringing in (see The Good Crisp Company Magic Spoon etc) And beyond that it’s fascinating to see Walmart lead in testing out diabetic/GLP-1/blood sugar friendly snack sections ( GNC just debuted this as well) beating out Target (re: Ozempic craze) Walmart has had their boot on Target’s neck and it won’t be loosening its grip—I can see them going to rebrand Greatee Value next 👀

We've all heard the "Three R's" since childhood, but how many of us truly understand their order of importance? It's not just a catchy phrase—it's a hierarchy. This hierarchy is especially relevant today as businesses promote reusable and "recyclable" bags for a fee, many of which aren't actually recyclable. Seeing plastic produce bags in grocery stores is always disheartening. These bags are destined for landfills, and often people end up buying reusable bags simply because they forgot theirs at home or in their car. The focus needs to be on reduction first. If reduction isn't possible, then we should aim to reuse. Only after exhausting these options should recycling come into play. Retailers have a crucial role in providing accurate information to help consumers make informed decisions. Recent legal actions against greenwashing highlight the importance of transparency. Hopefully, these cases will serve as a wake-up call for retailers to prioritize honesty over false environmental claims.
