Did you know the Charcuterie and Small Goods industry is a $4 billion industry? There’s a lot of money in salami! Pollinate was honoured to share consumer insights with industry members to help guide marketing and management decision-making at their Awards and conference in Sydney recently. An insightful observation was the passion this industry has for pure, natural food and how much they lament the rising criticism of being ‘processed’ food. As one respected elder noted, his company uses only pure natural ingredients, made and preserved the same way it has been (in Italy) by his family for many, many generations. In an era when there is clear scientific evidence that even drinking hot herbal tea can increase the risk of throat cancer, it seems about time we recognized that no food is simply ‘good’ or ‘bad’ but the wider system of influences on consumer choice, from retail and packaging to globalized food systems, can and should adapt to help make sure that every bite counts.
