💥 #BIG news which are no BIG #news! 💥 There has been many #speculations about the future #owner of SALOMON FoodWorld 🍔🍗 Now it is clear: Vion Food Group will keep #Salomon and not sell it! 👍 The team has been quite #relaxed. No matter who owns us, we have a clear #vision and way forward! The decision has many #advantages➕ as we can still #benefit from our mother company, e.g. for #beef🐄 and #pork 🐖 So we will continue to grow (hopefully like the #burger in the picture) and to deliver #value for the #gastronomy 🚀🚀 SALOMON FoodWorld #restaurants #gastronomy #foodservice #food

In a following series of posts, there are four dates in the history of the German brewing industry which feature prominently in the third volume of the five volume series The Inspiring History and of American Lager Beer, namely Volume 3: Born in Germany (1850s-1924). On the surface an epoch which at first glance must seem eclectic , the earliest of the two of the dates precede the use of the term “Reinheitsgebot”, while the two more recent trace to dates where it use is found in Reichstag legislation. They are: 1. May 31, 1872 2. June 3, 1906 3. March 17, 1910 4. September 30, 1921 Dates only touched upon in the series first two volumes, each have dedicated chapters in Volume 3 in order to provide readers with historical context as to their significance - especially as to why they shed light on the history of domestically brewed, and most importantly, domestically consumed, adjunct lager beer in Germany. But for the purposes of these posts, photographs from the past five days hopefully help provide a glimpse into the historical context associated with said dates. Let’s begin with May 31, 1872…..

The Barrel Revolution: how the last 50 years have brought drastic changes to a two-thousand-year-old industry? Tonight at 6pm, our CEO, András Kalydy will give a masterclass at the REVINO BUCHAREST WINE SHOW. The masterclass will focus on the following topics: · What has changed and how do today's technologies developed in barrel production meet the needs of the wine industry? · Why do we use barrels? · Why can there be 2000 different barrel characters, and what are the reasons for the differences? Through wine tasting, participants will discover how barrels can have a significant influence on wine, the major differences that can be achieved by making small modifications to specifications, and the tools available to consciously use barrels to achieve our winemaking objectives. Would you be interested in a similar masterclass? Located in the heart of Europe, Germany boasts a large population and high purchasing power, making it one of the world’s strongest economies and one of the largest wine-consuming countries. In 2023 Germany was the biggest wine importer in the world by volume, with 13.6 mhl, followed by the U.K. and the U.S. Despite this seemingly very positive change for Germany’s wine imports, the numbers were actually slightly smaller than the previous year across almost all wine categories except bulk wine, and the country’s ascension to first place was caused by larger drops in imports in the other top wine importers. https://lnkd.in/dKnnbkTD

Constellation Brands, a leading player in the alcoholic beverage industry, has adjusted its financial forecast for fiscal 2025, anticipating a significant downturn due to weakened demand in its wine and spirits division. The company indicated that a non-cash goodwill impairment loss, estimated to be between USD 1.5 billion and $USD .5 billion, will negatively impact its second-quarter results. Constellation Brands also significantly reduced its earnings forecast, lowering it to a range of USD 3.05 to USD 7.92 per share, down sharply from the earlier projected range of USD 14.63 to USD 14.93 per share. The company now projects a loss of USD 2.5 billion for the fiscal year, a marked shift from previous expectations. https://lnkd.in/eczrVKyZ

#Gastronomy is in trouble! ⚡️⛈️⚡️ And nobody talks about it! #DEHOGA reports a decline in the gastronomy (real) sales ☹️ And Circana shows that the visits are down by approx. -3% 📉 (excluding February due to one additional day). But the #guests feel that the #restaurants are full and with high prices, they should earn a lot of money 💰 They don‘t realize that #gastronomy need more than one #seating per evening and that just a few fully booked days are not enough. TRINK Magazine
A lot has happened in German wine over the past 50 years — good, bad, and never been better. Through it all (and long before), one association of German fine wine producers, the Verband Deutscher Prädikatsweingüter, or VDP, has elected itself to fly the standard of German wine. In her latest for TRINK, @valkatnyc examines what exactly it means to “Be VDP.” Especially when its 200 winery members find themselves, along with the rest of the wine world, at a historic crossroads. What lessons does the VDP’s more than a century of experience representing German fine wine hold for the wider wind world? Are producers and organizations like the VDP best served by remaining true to their standards and traditions? Can they evolve their notions of what quality wine looks and tastes like? Should they make more room in the tent for mavericks and in so doing, redefine quality for a new generation? Click the bio link for the full story. Exploring Acrylamide in Traditional Arabic Coffee Roasts: A Call to Discover Cultural Diversity in Coffee One of our recent scientific study in collaboration with Carmen Breitling-Utzmann (CVUA Stuttgart) and Dirk Lachenmeier (CVUA Karlsruhe), reveals a compelling look at acrylamide levels in traditional Arabic coffee roasts, prompting an essential dialogue within the coffee industry. Acrylamide, a compound formed during the roasting process, has raised health concerns across various food and beverage sectors. In this study, researchers delve into the complexities of acrylamide concentrations in Arabic coffee, a beloved drink within Middle Eastern culture, highlighting both the distinctive roasting methods and the broader health implications. The findings, published in the International Coffee Convention 2024 Proceedings MDPI, invite coffee professionals and decision-makers to deepen their understanding of regional coffee cultures and the nuanced chemical processes that give each cup its unique profile. Traditional Arabic roasting is a testament to the rich variety that coffee offers worldwide, with each cultural practice contributing something vital to the global coffee landscape. However, these methods bring their own set of challenges and responsibilities, especially as industry players strive to meet evolving health standards. Engaging with this research is an invitation not only to consider product quality and safety but also to appreciate the cultural heritage embedded in coffee practices across the globe. From the roasting temperature to bean selection, each factor impacts the final product’s taste and, importantly, its health profile. As the global demand for coffee diversifies, it is crucial to respect and incorporate these varied practices while also advancing health-conscious innovation. For decision-makers, this study is an eye-opener, calling attention to the significance of science-backed approaches in maintaining coffee quality without sacrificing tradition. The insights underscore the need for a balanced approach that honours cultural legacy while addressing consumer health concerns. Coffee professionals who recognise the value of such diverse practices will be better equipped to lead the industry into a future where tradition and innovation harmoniously coexist. Another investigation into Temu The reason appears to be about how products are promoted. According to the article (attached ) "These activities include posting fake discounts and reviews, forcing customers to play a “fortune wheel” game while hiding essential information about its conditions, displaying misleading information and hiding contact details for customers to file questions or complaints." A very exciting select group of wineries from Germany gathered at their own Pavilion to showcase to me, the effects of earth's warming on vineyards around the world. Icewine is getting even rarer, nowadays. Alcohol levels for the Rieslings have risen by a couple of degrees depending on the Pradikat. On the other hand, I saw the emergence of ( (red) Blauburgunder (Pinot Noir) and at Einig-Zenzen, a wonderfully generous and elegant Schwarzriesling (Pinot Meunier), labeled as "Black Riesling" for English speakers. https://lnkd.in/e3KPg4Xb Many of these showcase wineries tend to have single vineyard Blauburgunder to show off. A good or poor turnout of climate change is strictly up to you.

Riedel Austria – The wineglass specialized company. Why? Read below and watch the video. IS THERE ONE GLASS FOR ALL MY WINES? The most versatile shapes for red and white wines are found in the RIEDEL Wine Friendly Collection and the GRAPE@RIEDEL Collection. However, it‘s important to remember that the shape of the glass does matter for maximum intensity and total enjoyment of wine. DOES ONE GLASS FIT ALL? One glass can never provide the optimum experience for all styles of wine. A wine‘s bouquet, taste, balance, and finish are all influenced by the shape of the glass from which it is consumed. A wine will display very different characteristics when served in different glass shapes. These differences can be so great, that even experienced wine connoisseurs have believed that they are tasting as many different wines as there are different glasses. RIEDEL has created shapes that specifically enhance a wine‘s harmony and highlight its unique characteristics. Grape varietals carry in their DNA unmistakable flavor profiles, which add to the importance of selecting the appropriate glass. Wines have two, three or four flavor contributors which are associated with the fermentation. RIEDEL has extensively researched the impact of the size and shape of the glass across all popular grape varieties, leading to the conclusion, on which the world‘s wine experts agree: the aroma, taste, texture, finish and enjoyment of wine, is maximized by using the correct ‘WINE TOOL ‘. ENJOY YOUR WINE!
